Mint Chocolate Bites

Chocolate and mint together make the perfect holiday bite!
Sweetened with dates (and a few mini chocolate chips because, yum), it’s a treat you can eat anytime.


  • 1 cup soft pitted dates
  • ½ cup almonds
  • ½ cup cashews
  • ¼ cup cacao powder
  • 2 Tbsp coconut oil
  • 2 Tbsp mini Enjoy Life chocolate chips
  • 1 tsp vanilla
  • 1/2 tsp peppermint extract
  • 1/8 tsp salt


  1. Add dates to a food processor and pulse until chopped
  2. Add almonds, cashews, cacao powder, coconut oil vanilla, peppermint extract and salt and process until combined
  3. Add chocolate chips and pulse food processor to mix
  4. Put the mixture into a bowl and press down firm and freeze for 10 minutes
  5. Make into balls, rolling a tablespoon of mixture in your hands
  6. Store in an air-tight container in the refrigerator
