Mint Chocolate Bites
Chocolate and mint together make the perfect holiday bite!
Sweetened with dates (and a few mini chocolate chips because, yum), it’s a treat you can eat anytime.
Ingredients
- 1 cup soft pitted dates
- ½ cup almonds
- ½ cup cashews
- ¼ cup cacao powder
- 2 Tbsp coconut oil
- 2 Tbsp mini Enjoy Life chocolate chips
- 1 tsp vanilla
- 1/2 tsp peppermint extract
- 1/8 tsp salt
Directions
- Add dates to a food processor and pulse until chopped
- Add almonds, cashews, cacao powder, coconut oil vanilla, peppermint extract and salt and process until combined
- Add chocolate chips and pulse food processor to mix
- Put the mixture into a bowl and press down firm and freeze for 10 minutes
- Make into balls, rolling a tablespoon of mixture in your hands
- Store in an air-tight container in the refrigerator
