Crunchy Cabbage Slaw with Kimchi Peanut Dressing

Ingredients for the slaw
  • 4 cups shredded green cabbage (1/2 small cabbage)
  • 2 cups shredded carrots (2 medium carrots)
  • 1 red bell pepper thinly sliced
  • ½ small red onion thinly sliced
  • ¼ cup chopped cilantro
Ingredients for the dressing
  • ½ cup avocado oil
  • ¼ cup kimchi
  • ¼ cup smooth peanut butter
  • 2 Tbsp lime juice
  • 1 Tbsp liquid aminos
  • 1 Tbsp maple syrup
  • 2 tsp sesame oil
Instructions
  1. Add all the ingredients for the Crunchy Cabbage Slaw to a large bowl
  2. Add all the ingredients for the Kimchi Peanut dressing to a high-speed blender
  3. Blend for 30 seconds
  4. Pour 1 cup of the dressing into the slaw and toss to fully coat
