"Cheesy" Cauliflower Soup
Growing up my mom would serve cauliflower with a cheesy sauce and I loved it! This is a plant-based soup version of the same idea, my nod to her creation. Easy, incredibly tasty and perfect to warm up your insides.
“Cheesy” Cauliflower Soup
Ingredients
- 1 chopped onion
- 1 stalk chopped celery
- 1 minced clove garlic
- 1 bag organic cauliflower (32oz)
- 4 cups of broth
- 3/4 cup cashews
- ½ cup nutritional yeast
- ½ cup Dillyicious kraut
- 1/4-1/2 t. red pepper flakes
Directions
- Sauté together the onion, celery, garlic and cauliflower
- Add broth, cashews, nutritional yeast, kraut and pepper flakes
- Bring all ingredients to a boil, then simmer for 30 min
- Blend well
- Salt and pepper to taste
