Anytime Oat Bars
Ingredients:
- 1¼ cup oat flour
- 1¼ cup rolled oats
- 2 tsp cinnamon
- 2 tsp baking powder
- ½ tsp salt
- 1¼ cup (3 medium size) mashed ripe bananas
- 2/3 cup almond milk (or milk of choice)
- ¼ cup maple syrup
- 1 tsp vanilla
- 1/3 cup chopped walnuts
- ¼ cup sunflower seeds
- ¼ cup raisins
- ¼ cup chocolate chips
- ¼ cup unsweetened shredded coconut
Instructions:
- Preheat oven to 350 degrees
- Line a 9”x13” dish with parchment paper
- Mix together oat flour, rolled oats, cinnamon, baking powder and salt in a medium bowl
- Combine mashed bananas, almond milk, maple syrup and vanilla in a small bowl
- Pour the wet ingredients into the dry and mix to fully incorporate
- Mix in the chopped walnuts, sunflower seeds, raisins and chocolate chips
- Pour the mixture into the 9”x13” pan and spread into an even layer
- Sprinkle the shredded coconut all over the top
- Bake for 20-22 minutes until firm
- Remove the dish from the oven and let cool for 10-15 minutes
- Cut into 18 bars and store them in an air-tight container in the refrigerator for up to 7 days
- These also freeze well with a layer of parchment between each bar
