Anytime Oat Bars

Ingredients:
  • 1¼ cup oat flour
  • 1¼ cup rolled oats
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • ½ tsp salt
  • 1¼ cup (3 medium size) mashed ripe bananas
  • 2/3 cup almond milk (or milk of choice)
  • ¼ cup maple syrup
  • 1 tsp vanilla
  • 1/3 cup chopped walnuts
  • ¼ cup sunflower seeds
  • ¼ cup raisins
  • ¼ cup chocolate chips
  • ¼ cup unsweetened shredded coconut

 

Instructions:

  1. Preheat oven to 350 degrees
  2. Line a 9”x13” dish with parchment paper
  3. Mix together oat flour, rolled oats, cinnamon, baking powder and salt in a medium bowl
  4. Combine mashed bananas, almond milk, maple syrup and vanilla in a small bowl
  5. Pour the wet ingredients into the dry and mix to fully incorporate
  6. Mix in the chopped walnuts, sunflower seeds, raisins and chocolate chips
  7. Pour the mixture into the 9”x13” pan and spread into an even layer
  8. Sprinkle the shredded coconut all over the top
  9. Bake for 20-22 minutes until firm
  10. Remove the dish from the oven and let cool for 10-15 minutes
  11. Cut into 18 bars and store them in an air-tight container in the refrigerator for up to 7 days
  12. These also freeze well with a layer of parchment between each bar
